NAAN BREAD/BUTTER NAAN

This homemade naan / Indian Flat bread can be made without tandoor. It can be made in a tawa as tawa naan or can be made in an oven.

There are two secrets in making a perfect naan, one is patience and a lot of that and the second is high heat. Traditionally naan is made in tandoors or clay ovens where the temperatures can go from 600-800 deg celcius so we want to use as high heat as possible. If using a oven use the maximum temperature setting there.

Butter Naan recipes:

Ingredients:

  • Plain flour/maida flour-2 cups
  • Active yeast-2 tsp
  •  Salt as per taste
  • Sugar-1tsp
  • Water as required
  • Vegetable oil-1tbsp
  • Butter-1 tbsp

Method:

  1. In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes.
  2. Transfer the flour to a bowl and make a well in the middle. Add the salt,  and oil, 
  3. Then add yeast mixture.knead the dough until the surface becomes smooth and shiny, about 10 minutes.
  4. Cover the dough with a damp cloth or with plate and let it rise in a warm place (for example: beside the stovetop or warm oven). The dough should double in size, about 1 hour.
  5. Divide the dough into 8 equal portions. Roll the dough to oval shape  using a rolling spin.
  6. Just apply water on the one side of the dough portion
  7. Heat up a tawa over high heat and lightly grease the surface with some oil to avoid the dough from sticking to the skillet.
  8. Place the water apply portion on the tawa, When it puffs up arrises, just flip it over and keep on cast- iron and cook the other side.
  9. Repeat the same until all dough are done.
  10. Brush the naan with the melted butter, serve warm.

10)Roll out each portion of dough on a lightly  a oval shape

11)Just apply water on the one side portion of the dough

12)And place the water apply portion on the high heated tawa

13) bubble arrises on the top of the naan


14)  just flip it over and keep on cast-iron and cook the other side 

15)And apply butter on the top of naan 

16)serve it.

Recipe Notes:

  • If the dough is sticky, add extra 2 more tablespoons of flour to bind the dough.
  • Don't forget to add sugar in yeast ,because sugar help us to develop yeast fast.

Saravana bhavan style channa kurma

SARAVANA BHAVAN STYLE CHANNA KURMA This is purely South Indian style kuruma type chana masala (Kondakadalai kurma in Tamil). This not north indian style channa masala. I followed my Saravana bhavan kurma recipe with small changes and made this korma adding kondakadalai/Chickpeas. You can use black chana as well.
