FRIED EGGS IN SPICY MASALA

Egg being the wonderful source of proteins can be used to make many delicious dishes. One such amazing dish is that of  Fried Egg Masala Curry where boiled eggs are just simmered in spicy masala gravy. 

It has a nice tangy taste of tomatoes coupled with the flavours and taste of the spices that are used. You can always use leftover eggs from the breakfast or a party and toss it in a curry when you doesn't feel like cooking elaborate dishes but still like to have a delicious, scrumptious meal for dinner or goes well with rice also.

Ingredients:



  • Egg – 2 boiled
  • Onion-1 chopped finely
  • Tomato – 1 chopped finely
  • Ginger garlic paste-1 tbsp
  • Green chilli – 1chopped
  • Mint leaves- a spring
  • Saunf / Sombu or Fennel Seeds -1 tbsp
  • Pattai/cinnamon-1 inch
  • Lavangam/cloves-2 no
  • Bay leaf/brinayani leaf-1 no
  • Stone flower/kalpasi-little bit
  • Red chilli powder-1 tbsp
  • Coriander powder/dhanaya powder-1tbsp
  • Turmeric powder-1tsp
  • Garam masala powder-1tsp
  • Pepper powder/milagu powder-1tsp

Method:

  1. First boil the eggs and remove the shells.
  2. Then cut the boiled eggs into half.
  3. Take a pan of oil, add red chilli powder ,turmeric powder and salt little bit and put the eggs in pan and roast upside and down ,slowly without broke the eggs.
  4. Then in same pan itself add extra oil and add whole garam masala
  5. Add chopped onion and green chilli saute till turns into golden colour.
  6. Add mint leaves ant tomato cook till they became mushy.
  7. And add ginger&garlic paste and all spice powder.
  8. Add little water cook till raw smell gone and thick.
  9. Now add roasted egg mix well .
  10. Serve it with rice or roti...

12) Cook till oil sucks out
13) Add roasted eggs mix well
