Chidambaram Brinjal Gosthu – A famous delicacy from the region of Chidambaram prepared with Brinjal with freshly grounded spices and and tamarind paste; usually served as side dish for idli and dosa..

Chidambaram kathrikai gosthu recipes:

Ingredients:
  • Brinjal-4 no
  • Onion-3 no
  • Tomato-2 no
  • Salt as per taste
  • Tamarind pulp-3 tbsp
  • Turmeric powder-1/2tsp

To grind:

  • Coriander seeds-1tbsp
  • Dry Red chillies-4 no
  • Channa dal-1tsp

For tempering:

  • Mustard seeds-1tsp
  • Urad dal-tsp
  • A pinch hing
  • Curry leaves-a spring
  • Oil-1tbsp
  • Red chilli-4 slit

Method:

  1. Dry Roast the grinding ingredients and then ground it into fine powder, keep aside. 
  2. Chop the onions, brinjal and tomatoes keep aside. 
  3. Heat oil and add the tempering ingredients, temper it.
  4. And add onion and tomatoes saute it well
  5. Then add chopped brinjal mix well.
  6. Now add required water and close the cooker with lid
  7. And keep for 2 whistles in high flame.
  8. After pressure release .open the lid and see brinjal is cooked well.
  9. And add grained powder and mix well.
  10. Then add tamarind water and Simmer for few more mins till it gets like a masala.
  11. Serve it with hot idlis...

4)Then soak tamarind water and extract the pulp
5)Heat oil in a pan and add tempering item and temper it
6)Add onion chopped
7)Add chopped tomatoes 
8)Add brinjal saute well
9)now add required water
10)close with lid and cook for 2 whistles in a high flame
11)After pressure release ,open it and see brinjal is cooked well
12)Then add grained powder and mix well
13)Add tamarind water mix well
14)Simmer till we get thick gravy
15)Serve
