HOW TO PREPARE MUTTON STOCK /MUTTON STOCK

Stock is a flavoured liquid preparation. It forms the basis of many dishes, particularly soups, stews and sauces. Making stocks involves simmering animal bones or meat, seafood, or vegetables in water or wine, adding mirepoix or other aromatics for more flavor.

I uses this mutton stock for many dishes like briyani, gravy, curry etc...

MUTTON STOCK RECIPES:

Ingredients:

  • Mutton nenju elumbu-500 gram
  • Pattai/ cinnamon -1 inch
  • Lavangam/Cloves-2 no
  • Mace/Javitri -1 no
  • Bay leaf-1
  • Kalpasi/Black stone flower-1 no
  • Oil-1 tbsp
  • Ginger&Garlic paste-1 tbsp
  • Turmeric powder-1tsp
  • Salt-as per required
  • Water-as required

Method:

  1. First clean the mutton and keep separately.
  2. Heat oil in a pan and add whole garam masala.
  3. Then add mutton and turmeric powder, ginger&garlic paste and required water.
  4. Close with lid and cook for 5 whistles in a high flame.
  5. After pressure release ,open the lid and see mutton is cooked well.
  6. Then strain it and keep stock separately.
  7. And use the stock.
