MADURAI MUNIYANDI VILAS MUTTON SUKKA



Mutton Chukka Varuval is a lip smacking recipe serve as a side dish with rice, pulao, briyani or as starter.. Mutton chukka is not very regular in our menu but whenever we get in to the hotels, its mostly briyani or chukka as its our favourite.. I wanted to share this version which is most popular in Madurai especially Muniyandi Vilas a famous non-veg hotel...

Ingredients:

  • Mutton - 250 grams (Boneless)
  • Turmeric powder / - 1 tsp
  • Coconut oil - 2 tsp
  • Curry leaves - few
  • Lemon - 1/2 
  • Green chili -2 slit
  • Cashew-1 tbsp
  • Bay leaf/brinji ilai -1 no
  • Lavangam-2 no
  • Mint leaves-1 spring
  • Ginger &garlic paste-2 tbsp
  • Onion chopped- 1 no
  • Salt - as needed

FOR GRINDING :

Paste 1:

  • Fennel seeds / Sombu - 1/2 tsp
  • Red chilli- 3 no
  • Dhanaya seeds-1 tbsp
  • Milagu/Whole black pepper-1 tsp
  • Cumin seeds/jeeragam-1 tsp
  • Pattai-i inch
  • Lavangam-2 
  • Elaikai seed-2 no

Paste 2:(optional)

  • Fresh coconut - 2 tbsp
  • kasa kasa-1 tsp    

Method:

  1. First boil the mutton for that, take cooker add mutton ginger and garlic paste, salt, turmeric powder, water cook for 5 whistles
  2. Take pan add oil ,then add pattai, lavangam, bay leaf, cashews, mint leaves, ginger&garlic paste, green chilies.
  3. Add onion slices saute till golden colour, then add mutton mix well.
  4. Then add paste 1, salt and mutton stock mix well ,cook till they thick little bit.
  5. Then add pate 2 and cook till they dry.
  6. And serve with rice, rasam .

1)First boil the mutton with salt, turmeric powder ,ginger and garlic paste ,water for 5 whistles .

2)After pressure release ,open the lid and keep separately.

3)Then make paste1 and keep separately.
 

4)Pan add oil, whole  garam masala  , cashews, mint, green chilies.

5)Add onions, ginger&garlic paste mix well.


6)Now add mutton, paste 1, salt cook till raw smell gone.


7)Then add  paste 2 and cook till oil sucks out.



8)serve with rasam, kushka.
