             MIXED VEGETABLE SAMBAR

Sambar plays a important role in south indian menu..We make different types and different version of them suiting of the main dish which we have with it..And this sambar is made with a whole lot of veggies as well.

Vegetable sambar recipe:

Ingredients:

  • Oil – 1 tbsp
  • Shallots – 8 peeled and chopped roughly
  • Tomato – 1 large cubed
  • Brinjal – 1 chopped
  • Drumstick – 1 chopped
  • pumpkin – 1cube
  • Avaraikai – 4 chopped
  • Capsicum– 1/2chopped
  • Toor Dal / Tuvaram paruppu – 1 cup
  • Sambar Powder – 2 tbsp to taste
  • Coriander Powder – 2 to 3 tbsp
  • Turmeric powder – 1 tsp
  • Salt to taste
  • Tamarind Pulp – 1 to 2 tbsp
  • Water as needed

For Tempering:
  • Oil-1tbsp
  • Mustard Seeds / Kaduku – 1 tsp
  • Asafoetida / Hing / Kaya Podi – 1/2 tsp
  • Curry Leaves  a spring

Method:

  1. Take washed toor dal in a cooker, cover with water and cook for 3 whistle. Let it simmer for 5 mins. Now turn off the heat and let the steam escape all by itself. Open it mash well and set aside.
  2. Heat oil and add  tempering item and onion, chilli and tomato. Saute it for 2 mins.
  3. Add in all vegetables and saute it for 5 mins. Add turmeric and salt and mix well.
  4. Then add spice powder saute for few minutes.
  5. In cooked dal add tamarind paste and sauted vegetable and required water ,close and cook till all vegetables cooked well and raw smell gone.
  6. Serve it with rice and dosa

1)Take all your ingredients

1)Pressure cook the dal for 3 whistles and open it mash well and keep separately.
2)Pan oil tempering items. add onions and tomatoes saute it 
3)Then add all mixed vegetables and all spice powder saute well

4)Then in cooked dal add tamarind paste

5)Then transfer sauted vegetable into cooked dal and cook till raw smell gone and vegetable cook well
6)Serve it
