As Hindus consider turmeric powder a symbol of auspiciousness, puliyogare is usually cooked on special occasions and festive days. It is presented to God as part of prayers also given as prasadam in some temples; devotees queue to get it after Darshana


I have given step by step recipe for puliyogare paste Which you can store in fridge
for couple of weeks..I think you can store more than that,If you have puliyogare in your fridge then making puliyogare is a easy way..This can be put in lunch box for kids and all they will surely love it..

Ingredients:

  • Tamarind-1 lemon size (Soaked for 1 hrs)
  • Red chilli:15 to 20
  • Salt as per taste
  • Turmeric powder:1tsp
  • Kadalai paruppu/channa dal-1tbsp
  • Peanut/verkadalai -4 tbsp
  • Mustard sees/kaduku -1tsp
  • Ullundu/Urad dal-1tsp
  • Oil -1/2 cup(use gingelly oil)

Spice powder:

  • Methi seeds/Fenugreek seeds- !tbsp
  • Hing powder/perungayam powder-1 tbsp
For puliyogare:

  • Rice-2 cups cooked
  • Puliyogare paste-as required
  • Gingelly oil-1tbsp

 



Method:

  1. First soak the tamarind pulp for few hours and extract the tamarind pulp and keep separately the tamarind juice pulp.
  2. In Tamarind juice extract add Turmeric powder and salt mix well.
  3. Then take kadai add gingerly oil add mustard seeds after they pop up and add kadalai paruppu, peanuts and fry till golden colour.
  4. Add broken red chilli ,Curry leaves and fry it.
  5. Now add mixed tamarind extract water allow to boil well.
  6. In that time take another pan add oil little bit and add methi seeds ,hing powder roast it and make spice powder.
  7. Now add that salt, spice powder to puli paste and allow to cook till paste became thick and oil sucks out.
  8. After they became cold transfer into air tight container and store in fridge.
  9. When you need puli sadam just mix this paste with hot rice and serve .

1)Dissolve tamarind in water ,extract it and set aside



2)Heat gingelly oil add mustard seeds,Kadalai paruppu ,Urad dal, peanuts

3)Then add red chilli, curry leaves fry it

4)In tamarind water add turmeric powder ,salt mix well



5)And pour this tamarind mixer in frying pan and bring it to boil


6)Now roast methi seed and hing powder in fry pan and make powder


5) Add spice powder to paste boil well till they thick and oil sucks out

6)Now take rice and drizzle some oil over it and puliyogare paste mix it

7)Serve it
